Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the leftover Plov to the pan and stir gently to combine with the sautéed vegetables. Cook for 5-7 minutes, stirring occasionally, until the Plov is heated through.
If using, create a space in the pan, add the egg, and cook sunny-side up or however you like it.
Serve the Plov hot. If using the egg, place it on top. Garnish with fresh herbs if desired.
