
Pat the pork pieces dry with paper towels. Season generously with salt and pepper.

Add the pork to the hot pan in a single layer. Cook for 3-4 minutes, flipping occasionally, until browned on all sides and cooked through. Remove the pork from the pan and set aside.

Return the cooked pork to the pan with the zucchini. Stir everything together and cook for another minute to heat the pork through.
Taste and adjust seasoning with salt and pepper if needed. If using, sprinkle with grated cheese just before serving.
