
Heat the oil in a pot or large pan over medium-high heat.
Add the diced pork and cook, stirring occasionally, until browned on all sides, about 5-7 minutes.
If using, add the chopped onion and cook until softened, about 3-4 minutes.
Stir in the diced potatoes and carrots. Cook for 2-3 minutes, stirring to coat.
Add enough water or broth to just cover the ingredients. Bring to a simmer.
Reduce heat to low, cover, and simmer for 15-20 minutes, or until the vegetables and pork are tender.
Season with salt and pepper.
Remove from heat and stir in the sour cream until creamy. Do not boil after adding sour cream.
Serve hot, garnished with optional dried herbs if desired.
