
If using, finely chop the onion. Slice the sausages into bite-sized pieces.
In a medium bowl, whisk the eggs. Add milk or cream if using, salt, and pepper. Mix well.
Heat butter or oil in a non-stick pan over medium heat.
Add sliced sausages to the pan and cook until lightly browned and cooked through, about 5-7 minutes. If using onion, add it with the sausages and cook until softened.
Push the sausage (and onion, if using) to the sides of the pan. Place the bread slices in the center.
Carefully pour the whisked egg mixture evenly over the bread slices and around the sausages in the pan.
Cook for 3-5 minutes, or until the egg is mostly set on the bottom and edges. You can gently lift an edge to check.
Using a spatula, carefully flip each bread slice with the cooked egg and sausages attached (or flip bread and then sprinkle sausages back on top). Cook for another 2-3 minutes, or until the egg is fully set and golden brown on both sides.
Serve hot, garnished with chopped fresh herbs if using.
