
If your chicken wings aren't already cooked, cook them thoroughly first. Then, carefully remove the meat from the bones and chop it into small pieces.
In a bowl, whisk the eggs with the salt. Stir in the cottage cheese and mayonnaise until mostly combined.
Melt the butter in a non-stick pan over medium heat.
Add the finely chopped cauliflower and cooked chicken meat to the pan. Cook for 3-4 minutes, stirring occasionally, until the cauliflower starts to soften.
Pour the egg mixture into the pan with the chicken and cauliflower.
Let the edges set slightly, then gently push the cooked egg towards the center while tilting the pan to allow the uncooked egg to flow underneath. Repeat until the eggs are mostly set but still slightly moist.
If using, sprinkle in the black pepper and onion powder.
