
Peel and cut the potatoes into medium-sized cubes. Peel and grate the carrot using a coarse grater. Slice the cabbage into strips, and cut the sausage into rounds or cubes (whatever makes your heart sing).
Heat the oil in a large pot over medium heat. Add the grated carrot and cook for 3-5 minutes until it softens nicely.
Add the sliced cabbage to the pot with the carrots. Sauté, stirring occasionally, for about 5-7 minutes until the cabbage wilts slightly and its volume reduces (it's doing its happy dance!).
