
Heat oil or butter in a pan over medium heat.
If using, add diced onion or shallot and cook until softened, about 2-3 minutes.
Add the sliced sausages and cook until they are browned and heated through, about 5-7 minutes. Remove sausages from the pan and set aside.
Add grated carrot and shredded cabbage to the same pan. Sauté for about 4-5 minutes until softened but still slightly crisp.
Return the cooked sausages to the pan with the vegetables.
Stir in the cooked buckwheat. Season with salt and pepper and mix everything well to combine and heat through.
Divide the mixture into bowls.
