Add the flour (or breadcrumbs) and optional herbs to the varškė mixture. Start with 3 tablespoons of flour/breadcrumbs and mix until just combined. The mixture should be soft but workable. Add one more tablespoon if it's too wet to form patties.
Form the mixture into small patties, about 2-3 cm thick.
Heat the cooking oil in a non-stick pan over medium heat.
Carefully place the patties in the hot oil, ensuring not to overcrowd the pan. You may need to cook them in batches.
Cook for 4-6 minutes on each side, until golden brown and heated through.
