Continue this process, stirring gently, until the eggs are mostly set but still look moist.
If using, sprinkle the grated cheese over the eggs just before they are fully cooked, allowing it to melt slightly.
Remove the pan from the heat immediately when they reach your desired consistency (they will continue to cook slightly off the heat).
