
Rinse the buckwheat under cold water.
Combine the rinsed buckwheat and water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until water is absorbed.
While the buckwheat cooks, heat oil in a pan over medium-high heat.
Add the diced chicken to the hot pan. Season with salt and pepper. Cook, stirring occasionally, until the chicken is cooked through and golden brown, about 5-7 minutes.
If using the optional carrot, add it to the pan with the chicken about 3 minutes before the chicken is finished cooking, stirring well.
Once the buckwheat is cooked, fluff it with a fork.
Serve the cooked buckwheat with the seasoned chicken and carrots on top.
