
Rinse the rice under cold water.
In a medium saucepan, combine the rinsed rice and milk.
Bring the mixture to a gentle simmer over medium heat, stirring frequently to prevent sticking.
Reduce the heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and the porridge has thickened. Stir occasionally.
Stir in the sugar and salt (if using) until dissolved.
If using, stir in the vanilla extract and/or cinnamon.
Serve warm. It will thicken more as it cools.
