
Finely dice the onion and mince or crush the garlic.
Heat the oil in a large skillet over medium heat. Add the diced onion and cook until softened and translucent, about 3-5 minutes.
Add the minced garlic to the skillet and cook for another minute until fragrant (be careful not to burn it!).
Stir in the frozen potato and vegetable mix. Pour in the vegetable broth (or water), cover the skillet, and simmer over medium heat for about 15-20 minutes, or until the potatoes and vegetables are tender.
Stir the stew a few times during cooking. Season with salt and pepper to taste towards the end.
Serve hot, garnished with fresh, chopped herbs.
- Don't be afraid to get creative with your spices: favorite herbs, a dash of paprika, or even a pinch of chili flakes can add exciting new dimensions to your stew.
- For a more substantial meal, stir in some drained canned beans or chickpeas towards the end of cooking.
- Serve with fresh dill or parsley for a lovely garnish and a burst of freshness.
- This stew is fantastic for making in larger batches and reheating the next day (if there's any left, that is!).
