
Pat the chicken pieces dry with paper towels. Season generously with salt and pepper.
Heat the cooking oil in a skillet over medium-high heat.
Add the seasoned chicken to the hot skillet. Cook, stirring occasionally, until browned on all sides and cooked through, about 6-8 minutes depending on size.
If using, add the chopped onion and paprika to the skillet. Cook, stirring, for another 2-3 minutes until the onion softens slightly and the paprika is fragrant.
If using the optional carrot, add it now and cook for 3-4 minutes until slightly tender.
Remove from heat. Taste and add more salt or pepper if needed.
Serve the chicken hot, perhaps alongside the optional cooked rice or grain if using.
