Heat a pan over medium heat. Add the bacon (lašiniai) and cook until crispy. Remove bacon from the pan, setting aside on paper towel to drain. Reserve a little bacon fat in the pan if desired.

Slice the tomatoes and mozzarella into rounds. Pat mozzarella dry with paper towel if it's very wet.

If using the reserved bacon fat or a little oil, lightly toast the bread slices in the pan until golden brown. Alternatively, toast bread in a toaster.

Assemble your stacks: Place a slice of toasted bread on a plate. Layer with tomato slices, mozzarella slices, herring pieces, and the crispy bacon.
