
Heat the cooking oil in a small pan or wok over medium-high heat.
Add the diced chicken and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes.
Push the chicken to one side of the pan. Add the diced onion and carrots to the other side and cook for 2-3 minutes until slightly softened.
Add the minced garlic (and optional dried herbs if using) and cook for another 30 seconds until fragrant, being careful not to burn the garlic.
Combine the chicken and vegetables. Add the cooked rice, salt, and pepper.
Stir everything together well. If using the optional soy sauce/tamari, add it now and stir until everything is coated.
Cook for another 2-3 minutes, stirring, until the rice is heated through and everything is well combined.
Serve hot and enjoy your speedy snack!
