
Place the eggs gently in a pot of cold water. Bring the water to a rolling boil over high heat. Once boiling, reduce heat slightly and let them simmer for 9-12 minutes for hard-boiled eggs.
While the eggs are cooking, wash and chop the lettuce and cucumber. Place them in a medium-sized bowl.
Once the eggs are done, carefully drain the hot water and immediately run cold water over them or transfer them to an ice bath until they are cool enough to handle.
Peel the cooled eggs. You can slice them or cut them into quarters.
In a small bowl, whisk together the sour cream, lemon juice, salt, and pepper. If using, add the optional honey and whisk until combined. This is your speedy dressing!
Add the sliced or quartered eggs to the bowl with the lettuce and cucumber.
Pour the dressing over the salad ingredients just before serving. Gently toss to coat.
If using, sprinkle the optional grated cheese over the top of the salad.
Serve immediately and enjoy your healthy creation!

- 🥚 Make sure your eggs are properly cooled before peeling – run them under cold water or put them in an ice bath right after boiling! It makes peeling SO much easier (usually!).
- 🥗 Don't dress the salad until just before serving to keep the lettuce and cucumber crisp and happy!
- 🍋 If you like more zing, add a little extra lemon juice to your dressing. If you like it creamier, add a touch more sour cream!
