In a large pan or pot, heat the cooking oil over medium-high heat.
Add the ground meat (Farsas) to the hot pan. Break it up with a spoon and cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat if necessary.
Stir in the shredded Karka (pork knuckle meat) and cook for another 2-3 minutes to heat through and combine flavors. If using optional garlic, add it now and cook for 30 seconds until fragrant.
Add the sliced cabbage (Kopūstas) to the pan. Season with salt and black pepper. If using optional tomato paste, stir it in now. Stir well to combine all ingredients.
Reduce heat to medium-low, cover the pan, and let the cabbage cook down until tender, about 10-15 minutes, stirring occasionally. Add a splash of water (2-3 tablespoons) if it looks too dry.
While the cabbage cooks, prepare your cucumber salad. In a small bowl, combine the sliced or diced cucumber (Agurkas) with half of the chopped dill (Barstelis). Season with a pinch of salt and pepper.
Serve the hearty pork and cabbage mix hot, alongside the refreshing cucumber and dill salad. Garnish the salad with the remaining fresh dill.
