
Dice the tomatoes and cucumber and set aside in a bowl.
Slice the milk sausages into rounds.
Heat a drizzle of oil or butter in a pan over medium heat. Add the sausage slices and cook until lightly browned, about 3-4 minutes.
If using, add the chopped onion to the pan with the sausages and cook for another 2-3 minutes until softened.
Push the sausages (and onion) to one side of the pan. Crack the eggs into the other side. Scramble the eggs gently with a spatula.
Once the eggs are mostly cooked but still slightly wet, mix them with the sausages. Stir in the grated cheese until it starts to melt.
Season the egg and sausage mixture with salt and pepper to taste.
In a small bowl, mix together the mayonnaise and tomato sauce.
To serve, place the diced tomatoes and cucumbers into a bowl. Spoon the warm sausage, egg, and cheese mixture over the top. Drizzle with the mayo-tomato sauce.
Garnish with fresh herbs if desired. Enjoy immediately!
