
Bring a pot of salted water to a boil.
Add the pasta and cook according to package directions until al dente.
While the pasta cooks, heat the butter in a non-stick skillet over medium heat.
If using, add the chopped onion and cook until softened, about 3-4 minutes. Add garlic if using and cook for 30 seconds until fragrant.
Drain the cooked pasta and add it directly to the skillet with the butter (and onion/garlic if used). Toss to coat.
Create two wells in the pasta mixture and crack an egg into each well.
Dollop spoonfuls of cottage cheese around the eggs and pasta.
Season everything with salt and pepper.
Cover the skillet and cook for 3-5 minutes, or until the egg whites are set but the yolks are still runny (or cooked to your liking).
Serve hot, garnished with fresh herbs if desired. Stir it all together on your plate!
