
Rinse the pearl barley under cold water.
In a pot, combine the rinsed pearl barley and water (or broth). Bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes, or until the barley is tender. Drain any excess liquid if needed.
While the barley cooks, heat the cooking oil in a frying pan over medium heat. If using optional garlic and dried herbs, add them now and cook for 30 seconds until fragrant.
Crack the eggs into the pan and fry them to your liking (sunny-side up, over easy, etc.). Season the eggs with a pinch of salt and pepper.
Once the barley is cooked, season it with salt and pepper to taste. You can also stir in the cooked garlic and herbs now if you used them.
Divide the cooked barley into two bowls. Top each bowl with half of the cottage cheese or curd and one fried egg.
Serve immediately and enjoy your budget-friendly lunch!
