
Bring a pot of salted water to a boil.
While the water heats, warm the olive oil in a pan or pot over medium heat.
Add the chopped onion and cook until soft and translucent, about 5-7 minutes.
Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
Pour in the canned chopped tomatoes, add a pinch of salt and pepper. If using optional dried herbs, add them now.
Bring the sauce to a simmer, then reduce heat and let it cook gently for 10-15 minutes, stirring occasionally.
Add the pasta to the boiling water and cook according to package directions until al dente.
Drain the pasta, reserving a little of the pasta water.
Add the drained pasta to the tomato sauce. Stir well to coat. If the sauce seems too thick, add a splash of the reserved pasta water.
Serve hot, topped with optional grated Parmesan cheese.
