In a medium bowl, whisk together the egg, diced watermelon, sugar, and salt.
Add the flour (and baking powder if using) to the wet ingredients.
Gradually add the water or milk, stirring until you have a thick but pourable batter, similar to pancake batter. Don't overmix.
Heat about 1-2 cm of oil in a frying pan over medium heat.
Carefully drop spoonfuls of batter into the hot oil, leaving space between them.
Fry for 2-3 minutes per side, until golden brown and cooked through.
Remove fritters with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
Serve warm, dusted with powdered sugar if desired.
💡 Pro Tips for Fritter Fun:
- 🥄 Don't overmix the batter! A few lumps are totally fine and lead to tender fritters.
- 🔥 Make sure your oil is hot enough – too cool and your fritters will be greasy sponges, too hot and they'll burn before cooking inside. Test with a tiny drop of batter!
- ❄️ Got leftover fritters? They're surprisingly tasty cold or gently warmed up in a toaster oven!
