
Finely shred or slice the cabbage. Wash the bell peppers, remove the seeds, and cut them into thin julienne strips (the thinner, the crunchier the bite!).
Peel the banana and cut it into small cubes or slices.
In a large bowl, combine the shredded cabbage, bell peppers, and bananas.
In a separate small bowl, squeeze the lime and orange juices. Add the minced garlic clove (or press it with a garlic press if you're feeling lazy), pour in the olive oil, and season with salt and pepper. Mix everything well.
Pour the prepared dressing over the salad and toss well to ensure all the vegetables are coated. Let it sit for a few minutes to allow the flavors to meld.
Serve immediately and enjoy!
- For an even crunchier salad, slice the cabbage and bell peppers into very thin julienne strips.
- To get more juice from your citrus fruits, roll them firmly on a counter before squeezing (a true vitamin treasure trove!).
- Feel free to add other favorite seeds or nuts to this salad – sunflower or pumpkin seeds would be excellent additions.
- This salad is best enjoyed immediately so it doesn't get soggy, but if covered, it will last in the refrigerator for up to a day.
- If you want to make it heartier, consider adding cooked chicken or avocado slices.
