
Prepare the vegetables: Thinly slice the cabbage. If using onion and garlic, chop the onion and mince the garlic.
Heat the cooking oil in a large pan or pot over medium-high heat.
If using, add the chopped onion and cook until softened and translucent, about 3-5 minutes.
If using, add the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
Add the sliced cabbage to the pan. It might look like a lot, but it will wilt down!
Stir the cabbage frequently, cooking for 10-15 minutes, or until it is tender but still has a slight bite.
Season generously with salt and black pepper to taste. Stir well.
Serve hot. Garnish with fresh herbs if desired.
