
In a bowl, whisk together the eggs, milk or water, salt, and pepper until well combined.
Heat the butter or oil in a non-stick frying pan over medium-low heat until melted and shimmering.
Pour the egg mixture into the hot pan. Let it set around the edges for about 30-60 seconds.
Using a spatula, gently push the cooked edges towards the center, tilting the pan to let the uncooked egg flow underneath.
Once the top is mostly set but still a little moist, sprinkle the grated cheese and optional spinach and herbs over one half of the omelette.
Carefully fold the other half of the omelette over the filling.
Cook for another 30 seconds to a minute, or until the cheese is melted and the omelette is cooked through.
Slide the omelette onto a plate and serve immediately.
