For the base (optional): If using macadamia nuts, process them in a food processor until they form a crumbly texture. Press this mixture into the bottom of serving glasses or bowls.
In a blender or food processor, combine the pitted avocados, cacao powder, date paste (or sweetener), plant-based milk, vanilla extract, and salt.
Blend until the mixture is completely smooth and creamy. Scrape down the sides as needed to ensure everything is incorporated.
Spoon the chocolate mousse into the prepared glasses or bowls, on top of the optional base.
Cover and refrigerate for at least 30 minutes to allow it to set slightly and chill.
Before serving, garnish with optional shredded coconut, fresh berries, and mint leaves.
💡 Pro Tips:
- ❄️ For a firmer mousse, chill for at least 2-3 hours. Patience is a virtue, especially for dessert!
- Blender getting stuck? Add just a tiny splash (1-2 tbsp) of plant milk to get things moving, but use as little as possible for thickness.
- 🌰 If you don't have macadamias, cashews or almonds make a great base too!
