
Finely chop the onion and garlic. Slice the banana into rounds.
Heat the oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 1 minute.

Push the rice to one side of the skillet. Crack the eggs into the cleared space and quickly scramble them until set. Mix the cooked eggs with the rice.
Add the banana slices to the skillet. Fry for 2-3 minutes, until the bananas are slightly caramelized and softened. Carefully mix everything together.
Serve the fried rice immediately. You can garnish with fresh herbs if desired.
