Pour in the water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed and the grikiai is tender. Remove from heat and let stand covered for 5 minutes.
While the grikiai cooks, heat a large skillet over medium heat. If using optional onion and garlic, add oil and sauté them until softened.
Add the pulled pork to the skillet. Stir in the paprika, salt, and pepper. Cook for 5-7 minutes, breaking up any large pieces of pork and letting it heat through and crisp slightly.
If using optional carrot, add it now and cook for 5 minutes until slightly tender.
Add the cooked grikiai to the skillet with the pulled pork. Stir everything together to combine and heat through for another 2-3 minutes.
Taste and adjust seasoning if needed. Serve hot.
