
Preheat your oven to 180°C. Lightly grease a medium baking dish (approx. 20x20 cm) with butter or oil.
Scatter the cubed bread evenly into the prepared baking dish.
In a large bowl, whisk together the eggs, milk, and salt until well combined.
Stir in the cooked and sliced breakfast sausages and the diced cured sausage into the egg mixture.
If using, add the dried herbs to the egg mixture and stir.
Pour the egg and sausage mixture evenly over the bread cubes in the baking dish, making sure all the bread is soaked.
If using, sprinkle the shredded cheese over the top of the bread bake.
Bake for 25-30 minutes, or until the top is golden brown and the egg mixture is set in the center.
